if such a thing is implemented, you/someone else (since it'd be kind of hard to with just one hand) should be able to bend metal rods into a crude hook, and just recklessly jam it in the stub and cause bleeding+brute dmg

This would be fantastic. I would add in some negatives to encourage people to still try to get good limbs, like hook hands being unable to pick up small items and a pegleg causing you to trip every one in a while. Also grog should at least have a chance of giving you these limbs.
