You can already sign language through custom emotes.
And you can already "sign" language to the AI. Through paper and cameras. Pen Pun intended.
..That said the AI communicating through monitors would be cool, I don't think it would have to go through facial verbs, it could be one of those things the AI could "deploy" to, like its shells and drones.
You'd have to have AI screens positioned better. One in each sector (research, med, engine, security, bridge, QM). One in the cap's room. One in the AI foyer and Module room. One in the bar. And 1-2 dotted in obscure places so secret conversation is possible. Note that this can all be done with a shell, but it'd be a cool flavor thing.
