As of posting, you can customize your arms in the character creation screen. Syntharms and human arms are on-par (if I remember correctly), robotic arms cost a trait point each, missing an arm gives you a trait point, etc. So, why not organs too? I thought it might be interesting, and spice up gameplay!
Now, some organs should definitely be barred from this. I think brains, hearts, and lungs shouldn't be editable in the screen, so nobody accidentially dies of cardiac abscondment roundstart. The rest of the organs are good.
Having human or synthorgans is neutral, having a missing organ is a point plus, having a cybernetic organ subtracts a point, yadda yadda yadda. So, you could do something interesting like have a chef character with a cybernetic stomach or intestinal tract, or a doctor missing their pancreas so you have to take insulin periodically! Just fun little changes to gameplay like that.
