You need to keep an eye on potency of the plants as well. If the clear corn doesn't have any ethanol in it, it won't contribute to evolutions.
A hen decides to lay an egg based on happyness and a clock. If it is happy enough, it will lay eggs very regulary. Petting it until it clucks happily will speed it up tremendously.
Roosters/hen are rng, but it can be used. Roosters are better for speeding out mutations. If a rooster has eaten enough feed and it hatches an egg, its a 50% chance to take the roosters gene and thus behaves like a evolution eligible hen laid the egg. You can hatch 3-4 evolved chickens at a time that way.
