Pretty much what Cal said, you'll end up having more fun and probably learning quicker.
But, and I'm not dying on this hill but it's something to consider: Because ranching is still locked behind secret content in its entirety its not normally available for local servers. If you want to practice or do some riskier ranching unlike most department stuff you're going to be doing it live. It also has less slots available than botany, so if anything its kind of weird we've got Botany in the afterlife that's usually got plenty of slots.
Then again then again, Ranching isn't tremendously competitive for getting a slot in my experience. I can usually get a slot more often than not, and GENERALLY SPEAKING any particularly risky egg magic at least confines its danger to its own department, or isn't any more dangerous than say: Chemistry making something really fun, your junior/senior artscientists licking an artifact bomb, or really just anything because every department is a deathtrap in its own way.
So I honestly don't know man. Unless we suddenly keep losing the station to situations eggxtremis, there's a 20+ person battle for rancher as their favourite job, I'd say probably just take a shot at it in rounds. Accidents happen, failed experiments happen, and if you stashed a ranch in the afterlife there's some things it would still be missing.
