Insulin sits unused by medbay except in the rare case you can identify a sugar overdose.
I suggest giving it an overdose so traitor doctors can knock people out by injecting too much.
Perhaps if it's not too much of a medical stretch, make it mimic some of the effects of neurotoxin, alcohol and probably some other drugs.
A traitor doctor could just insulin inject someone and be all "That's clearly a changeling victim", or "Barman's using moonshine".
No one would question it.
Plus medicines that could be misused are just as fun.
