Butchering changeling critters should give their respective limbs (although with "changeling's [x]" instead of the masters name) and drop anywhere from 1 to 5 pieces of changeling meat. Putting a changeling corpse in the gibber also gives changeling meat.
Changeling meat has a unique texture and contains changeling blood and a bit of neurotoxin. You can also cook it into a steak.
