You will slur "placeholder" when drunk rather than any of the drunk talk phrases.

I noticed this with one of the drinks on Oshan before and assumed it was a quirk of a novelty drink that wasn't finished

Which drink was it that you consumed, if you can remember? It might be Curaco, as that drink seems to have been introduced with Oshan.

this isn't related to my change, all i can find is a block of code in Curacao that hard codes "placeholder" for some reason.
is all drunk talk broken or just that one drink?

Five months later, Curacao drunktalk still slurs "Placeholder". Bo Jack Daniel's drunktalk is still fine.
