It's happened to me twice in the last month.
Just make it so a bomb detonated from the inside explodes the icy shell.

HUMOROUS IDEA THAT BUILDS OFF FEATURE-
Have the ice cube go flying off. (Based on the shockwave, or if in the center, in a random direction)
Even better, have it smash through things based on explosion force.
This lowers practicality as a destructive weapon but holy god does it up the fun factor, and still makes it a useful last ditch bomb defense. Which seems win-win to me.
