Because they haven't absorbed their DNA, it's an imperfect appearance and they can only hold it for so long before reverting to their previous form.
I was thinking about this more.
How about the ling can brush up against people and acquire one of their traits (hair color, skin color, hair style, body shape) and can be a kind of amalgamation of several people.
Or how about if they alter their body to give the appearance of wearing clothing as a late ability. Like Venom's Symbiote Suit

These are all nice ideas, might actually make ling suitable for RP even. Never expected to be saying that, but here we are.
